Light speeds up the oxidation process which shortens the shelf life of the oil. Oil should always be stored in containers which have a minimal amount of air below the lid. Air also speeds up the oxidation process. Extremes of temperatures can also oxidise your oil. If water and heavy sediment are present in your oil, it is imperative to make sure you decant your oil from the container to another clean container to minimise oxidation rate. When water comes into contact with the oil some of the keeping properties of the oil are present in the water.
